I thought about calling this salad a Brutus salad as it strays a bit from the original Caesar salad that served as inspiration but in the end I figured that was a bit of a stretch.

Also of course the Caesar salad was named after a different Caesar so it wouldn't make much sense...

Thinking about it I did keep the original premise of the Caesar salad in mind by simply using the available ingredients and making something out of it.

With the potato croutons you add the same crunch to your salad as with regular croutons but it adds something extra.

Caeser salad with potato croutons

The ingredients for caeser salad with potato croutons:

  • 8 eggs; boiled
  • 4 heads of romaine lettuce; washed and in pieces
  • 800 gram potato croutons;
    Note! Quantities below are for 4 portions.
    • 400 gram potatoes; in cubes
    • 3 cloves garlic; pressed
    • olive oil;
  • 300 gram bacon bits;
  • 800 gram chicken thigh filets;
  • 30 milliliter mayonaise;
  • 50 gram anchovies; chopped
  • 150 gram Parmigiano-Reggiano; in slices
  • Worcestershire sauce;
  • lime juice;

How to make caeser salad with potato croutons?

  1. Prepare the potato crouton.
    1. Preheat the oven at 220°C.
    2. Mix the potato, the garlic and the olive oil.
    3. Bake in the oven for 15 minutes.
    4. Remove the baking tray from the oven; mix the ingredients so they are turned and spread them out again over the baking tray. If you have too much moisture this is a good time to remove it with a kitchen towel.
    5. Bake in the oven for 15 minutes.
    6. Your dish is ready, enjoy!
  2. Fry the bacon bits and drain any surplus fat.
  3. Grill the chicken thigh filets for 15 till done.
  4. Cut the chicken thigh filets into pieces
  5. Mix the mayonaise, the anchovy, the Worcestershire sauce and the lime juice.
  6. Mix everything together.
  7. Your dish is ready, enjoy!
