A delicious appetizer with a luxury touch but if you take your time it's easier to make than you first think.

Coquilles Mornay

The ingredients for coquilles mornay:

  • 8 coquilles Saint-Jacques; cleaned
  • court bouillon;

    • 250 milliliter white wine;
    • 1 onion; in slices
    • 1 carrot; in slices
    • 1 bay leaf;
    • 4 black peppercorns;
    • 500 milliliter water;
  • 200 milliliter sauce Mornay;

    • 2 shallots; chopped
    • 25 gram butter;
    • 25 gram flour;
    • 200 milliliter milk;
    • 70 gram Gruyère; grated

How to make coquilles mornay?

  1. Prepare the court bouillon.
    1. Add the white wine, the onion, the carrot, the bay leaf, the black peppercorn and the water to a soup pan
    2. Bring to a boil then reduce heat to medium temperature.
    3. Boil for 20 minutes.
    4. Sieve the stock.
    5. Your result is ready for further use.
  2. Prepare the sauce Mornay.
    1. Add the butter to the pan.
    2. Lightly fry the shallot in the pan until translucent.
    3. Add the flour and mix together to a roux.
    4. Slowly add the milk bit by bit while whisking until you have a smooth mixture.
    5. Slowly add the Gruyère bit by bit while whisking until you have a smooth mixture.
    6. Your result is ready for further use.
  3. Add the court bouillon to a soup pan
  4. Bring to a boil then reduce heat to medium temperature.
  5. Add the coquille Saint-Jacques
  6. Boil for 2 minutes in the court bouillon.
  7. Remove the coquille Saint-Jacques.
  8. Put the coquilles Saint-Jacques in an oven proof dish. Or multiple smaller dishes 1 per serving.
  9. Drizzle with the sauce Mornay.
  10. Put under the oven grill for 3 minutes or till it has a nice color.
  11. Your dish is ready, enjoy!
