A nice little side dish. Although it takes an hour to cook it's not that difficult and most of the time the eggplant is in the oven and you can focus your time on another dish. Also it doesn't really matter if you keep it in the oven longer so it's a really nice flexible side.

Oven baked eggplant

The ingredients for oven baked eggplant:

  • 1 eggplant; halved
  • 2 cloves garlic; chopped
  • 1 onion; in slices
  • 1 tomato; in cubes
  • olive oil;
  • 5 gram sea salt;

How to make oven baked eggplant?

  1. Preheat the oven at 200°C.
  2. Add the eggplant to your roasting pan.
  3. Bake in the oven for 30 minutes.
  4. Grab a new pan.
  5. Add to the pan.
  6. Lightly fry the garlic and the onion in the pan until translucent.
  7. Add the sea salt
  8. Add the tomato and cook for 15 minutes.
  9. Turn of the gas below the pan.
  10. Fill the eggplant with the mixture.
  11. Preheat the oven at 180°C.
  12. Bake in the oven for 30 minutes.
  13. Your dish is ready, enjoy!
