The ingredients for paella:
- Sofrito; Note! Quantities below are for 4 portions.
- 2 onions; chopped
- 4 cloves garlic; chopped
- 400 gram peeled tomatoes; canned
- 2 teaspoons paprika;
- 1 splashes olive oil;
- 600 gram risotto rice;
- 2 liter fish stock;

- 250 gram chorizo; cut in half moon slices
- 250 gram chicken thigh filets; in cubes
- 300 gram shellfish;
- 150 gram green peas; frozen
- olive oil;
- 1 table spoons turmeric;
- pepper;
- sea salt; grinded
- 2 lemons;
How to make paella?
- Prepare Sofrito.
- Add the olive oil to the pan.
- Lightly fry the onion and the garlic in the pan until translucent.
- Add the paprika and fry shortly while stirring.
- Add the peeled tomatoes
- Let it boil for 20 minutes.
- Your result is ready for further use.
- Grab a new pan.
- Add the olive oil to the pan.

- Add Sofrito and the turmeric and fry shortly while stirring.
- Add the fish stock
- Let it boil for 20 minutes until the risotto rice is cooked.
- Grab a new pan.
- Add the olive oil to the pan.
- Add the chorizo and fry on medium temperature until colored.
- Add the chicken thigh filet and cook for 5 minutes.
- Add the shellfish and cook for 2 minutes.
- Add the green pea and cook for 3 minutes.
- Flavor with the pepper and the sea salt
- Add the risotto rice and cook for 5 minutes.
- Serve with lemons.
