Most Dutch people will think of this when you mention fried rice to them; this is how it was served in the first Chinese restaurants in Holland.

Cantonese fried rice

The ingredients for cantonese fried rice:

  • 800 gram rice; boiled
  • 200 gram back bacon; in slices
  • 4 onions; chopped
  • 6 eggs; beaten
  • 450 gram green peas; frozen
  • 2 spring onions; in slices
  • 40 gram bean sprouts;
  • stir-fry oil;
  • pepper;
  • salt;

How to make cantonese fried rice?

  1. Mix the egg, the pepper and the salt.
  2. Add the stir-fry oil to the pan.
  3. Add the egg
  4. Cook on medium low temperature till it's almost fully set. Move your pan around to spread the mixture evenly.
  5. Fold together in three layers. First fold over one third on one side of the pan and then fold over one third on the other side over this. This will help the last bit of the mixture cook through.
  6. Remove from pan and set aside.
  7. Cut into strips.
  8. Grab a new pan.
  9. Add the stir-fry oil to the pan.
  10. Lightly fry the onion in the pan until translucent.
  11. Add the back bacon and the green pea and cook for 5 minutes.
  12. Add the rice and cook for 5 minutes.
  13. Add the egg, the spring onion and the bean sprouts and fry shortly while stirring.
  14. Your dish is ready, enjoy!
