I usually obtain my duck fat from a can of duck confit. After using the duck itself for whatever dish you are making the fat remains in the can.
Take out the leftover parts of duck so you only have the clean fat left . It's easiest to do this when the fat is still melted as you can see the contents of the can clearer through the clear fat.
Afterwards pour the fat into a jar. Keep the jar of duck fat in the fridge and use whenever you need it!
