Moussaka

The ingredients for moussaka:

  • 600 milliliter béchamel sauce;
    Note! Quantities below are for 1 portions.
    • 25 gram butter; in cubes
    • 35 gram gluten free flour;
    • 500 milliliter milk;
    • 1 egg;
    • 35 gram Grana Padano; grated
  • 500 gram minced meat;
  • 1 eggplant; in long thin slices
  • 500 gram potatoes; in slices
  • 1 onion; chopped
  • 4 cloves garlic; chopped
  • 10 gram cinnamon powder;
  • 10 gram dried oregano;
  • 10 milliliter rosé wine;
  • 400 milliliter diced tomatoes;
  • 50 gram Grana Padano; grated
  • olive oil;

How to make moussaka?

  1. Preheat the oven at 220°C.
  2. Wash the potato and dry with some kitchen paper.
  3. Mix the potato, the dried oregano and the olive oil.
  4. Bake in the oven for 15 minutes.
  5. Remove the baking tray from the oven; mix the ingredients so they are turned and spread them out again over the baking tray. If you have too much moisture this is a good time to remove it with a kitchen towel.
  6. Bake in the oven for 15 minutes.
  7. Preheat the oven at 180°C.
  8. Prepare the béchamel sauce.
    1. Heat the milk to just under a boil.
    2. Slowly melt the butter in a pan. Note: Make sure you only melt the butter don't let it go too fast.
    3. Add the gluten free flour and mix together to a roux.
    4. Slowly add the milk bit by bit while whisking until you have a smooth mixture.
    5. Slowly add the egg and the Grana Padano bit by bit while whisking until you have a smooth mixture.
    6. Stir regularly so nothing sticks to the bottom of the pan.
    7. Your result is ready for further use.
  9. Take the eggplant.
  10. Drizzle with the olive oil.
  11. Grill the eggplant till it has a nice grilled striped color.
  12. Grab a new pan.
  13. Add the olive oil to the pan.
  14. Lightly fry the onion and the garlic in the pan until translucent.
  15. Add the cinnamon powder
  16. Add the minced meat and fry on medium temperature until colored.
  17. Deglaze with the rosé wine.
  18. Add the diced tomatoes
  19. Let it briefly reduce.
  20. Turn of the gas below the pan.
  21. Create one layer of the potato in a baking dish
  22. Add a layer of minced meat.
  23. Add a layer of eggplant.
  24. Add a layer of minced meat.
  25. Add a layer of béchamel sauce.
  26. Add a layer of Grana Padano.
  27. Bake in the oven for 30 minutes.
  28. Your dish is ready, enjoy!
