- 900 gram beef stew meat;
- 200 gram chorizo; cut in half moon slices
- 1 onion; chopped
- 3 shallots; chopped
- 5 cloves garlic; chopped
- 1 winter carrot; cut in half moon slices
- 2 red bell peppers; sliced
- 3 table spoons flour;
- 3 bay leaves;
- 3 twigs rosemary;
- 2 teaspoons thyme; only the leaves
- 200 milliliter red wine;
- 400 milliliter diced tomatoes; canned
- 400 milliliter beef stock;
- 1 splashes olive oil;

- Add the olive oil to the pan.
- Add the chorizo to your pan and sear on medium temperature until colored. Use multiple portions if needed.
- Remove from pan and set aside.
- Add the beef stew meat to your pan and sear on medium temperature until colored. Use multiple portions if needed.

- Lightly fry the onion, the garlic and the winter carrot in the pan until translucent.
- Add the red bell pepper and the flour and fry shortly while stirring.
- Add the bay leaves, the rosemary and the thyme to the stew.

- Stew for at least 3 hours.
