Almond dough

The ingredients for almond dough:

  • 185 gram flour;
  • 20 gram granulated sugar;
  • 70 gram almonds; grinded
  • 10 gram lemon zest;
  • 160 gram unsalted butter; in cubes
  • 1 table spoons ice water;

How to make almond dough?

  1. Sift the flour in a large bowl.
  2. Add the granulated sugar, the almond and the lemon zest
  3. Mix everything together.
  4. Add the unsalted butter
  5. Knead the dough for about 2 minutes.
  6. Add the ice water
  7. Knead the dough for about 2 minutes.
  8. Keep in the fridge for at least 60 minutes. After this time it's ready to use.
