The ingredients for oven baked salmon risotto:
- 2 table spoons olive oil;
- 15 gram unsalted butter;
- 3 shallots; chopped
- 1 teaspoons dried basil;
- 2 salmon fillets; in pieces
- 100 gram small crayfish; peeled
- 100 gram green asparagus tips; cleaned
- 270 gram risotto rice;
- 1 liter fish stock; boiled
- 75 gram Grana Padano; grated
How to make oven baked salmon risotto?
- Preheat the oven at 200°C.
- Add the olive oil and the unsalted butter to the pan.
- Lightly fry the shallot in the pan until translucent.
- Add the dried basil, the salmon fillet, the small crayfish and the green asparagus tips and fry shortly while stirring.
- Add the risotto rice and fry shortly while stirring.
- Add the fish stock
- Bake in the oven for 30 minutes.
- Add the Grana Padano
- Your dish is ready, enjoy!
